<p>½ de xícara de chá de batata inglesa cortada em pedaços pequenos<br />
500 ml de água filtrada<br />
2 colheres de sopa de alho-poró (talo) picado em tiras fininhas<br />
1 colher de sobremesa de cebola picada<br />
½ dente de alho espremido<br />
2 colheres de chá de óleo de canola<br />
¼ folha de louro<br />
1 pitada de noz-moscada<br />
400 ml de caldo básico de frango para o preparo de sopas<br />
Pouco sal<br />
Salsinha picada</p>
<p><em>Modo de Preparo</em></p>
<p>Coloque a batata em uma panela com a água, cubra com as folhas de alho-poró e cozinhe até a batata ficar bem macia (quase desmanchando). Retire do fogo, despreze a água e, assim que a batata amornar, bata no liquidificador com o caldo básico de frango, até obter uma mistura homogênea. Refogue numa panela a cebola ralada com o alho e a pimenta. Acrescente o alho-poró e deixe dourar mais um pouco. Em seguida adicione a mistura, a folha de louro e deixe cozinhar em fogo brando por 5 a 10 minutos. Retire a folha de louro. Adicione a noz-moscada e acerte o sal. Acrescente a salsinha picada no prato e sirva em seguida.</p>

<p>1 carcaça de frango sem a pele (300g)<br />
2 colheres de sopa de óleo de canola<br />
1 cebola grande picada<br />
1 maço de cheiro verde<br />
2 talos de salsão<br />
1 cenoura<br />
1 tomate picado<br />
3 dentes de alho laminados<br />
Pouco sal<br />
Pimenta do reino e cheiro verde a gosto<br />
3 L de água filtrada</p>
<p><em>Modo de Preparo</em></p>
<p>Em uma panela grande, doure a carcaça de frango no óleo, mexendo sempre. Acrescente aos poucos o restante dos ingredientes e refogue. Em seguida adicione a água e cozinhe em fogo brando por 40 minutos. Deixe amornar e passe por uma peneira.</p>
<p>Para extrair a gordura, leve o caldo a geladeira por 4 horas. Retire a gordura da superfície do caldo com o auxílio de uma colher.</p>
<p><em>Observação:</em> Pode ser congelado em porções individuais.</p>

<p>½ pires de folhas de repolho picadas<br />

<p><em>Modo de Preparo</em></p>
<p>Refogue a cebola, o repolho e a abobrinha no óleo de canola. Acrescente um pouco do caldo básico de frango e deixe ferver. Adicione o restante do caldo e o agrião picado. Tampe e cozinhe por 10 minutos em fogo brando. Bata tudo no liquidificador e leve ao fogo novamente, desligue, dilua o missô e sirva.</p>

<p>50 g de cogumelos frescos (shitake, shimeji e champignon de paris)<br />
1 colher de sobremesa de cebola picada<br />
2 colheres de chá de óleo de canola<br />

Pouco sal<br />
Pimenta branca moída a gosto</p>
<p><em>Modo de Preparo</em></p>
<p>Lave os cogumelos, corte-os em lâminas finas e reserve metade. Refogue a cebola e a outra metade no azeite. Acrescente o caldo básico de carne e deixe cozinhar um pouco. Em seguida, espere esfriar e bata no liquidificador. Leve ao fogo junto com o restante dos cogumelos e tempere com sal e pimenta branca. Sirva em seguida.</p>

<p>Em uma panela grande refogue o alho no óleo de canola. Acrescente os outros ingredientes um a um mexendo sempre. Refogue por 10 minutos e acrescente o caldo básico de carne. Cozinhe por 30 minutos ou até os legumes ficarem macios. Sirva em seguida.</p>
